Spring always has me craving fresh fruit – today that craving happened to be for mangoes! Because I also have a current obsession with cauliflower, I thought it would be great to come up with a recipe that combines the two. Guys and gals, this dish is delicious! It works perfectly as a side dish with just about anything. I paired mine with salmon, but you can enjoy yours however you would like.
Ingredients:
-2 cups riced cauliflower, cooked (you could make your own, OR you could take the lazy route, like I did, and purchase frozen cauli-rice from Trader Joe’s)
-1 whole mango, cubed
-2 tbsp coconut oil
-1 tbsp coconut butter
-Juice from 1 lime
-2 tbsp fresh cilantro
-Salt to taste
Directions:
Melt coconut oil and coconut butter in a sauce-pan. Combine all ingredients and and add to pan. Saute until heated up to desired temperature. Garnish with cilantro and enjoy!
I know these directions aren’t as specific as some would like but if you know me, you know I’m a “combine everything in a pan” kind of girl. Keepin’ it simple for the win.
